Coconut Milk Chia Pudding
By now you've probably already read about the benefits of chia seeds (high in fibre, protein and omega-3s, to name a few!), and of the potent antioxidants found in berries and bananas in the corresponding articles.

Add to that the healthy fats found in organic coconut milk and you've got a dessert that ticks all the boxes!

As far as desserts go this is one of the healthiest, and it's full of organic superfoods. You've also got the option to go completely sugar free. It doesn't really need sugar added anyway.

It's also really easy to make so make sure you give it a try! Just be sure to refrigerate the chia puddings for at least 4 hours, or overnight. This will give the pudding time to set. The chia seeds will become gelatinous and expand to 4 times their size!

  • 1 cup organic coconut milk
  • 1 ripe banana
  • 1/2 cup fresh berries
  • 2 tablespoons chia seeds
  • ¼ cup water
  • ½ teaspoon vanilla essence
  • 1 teaspoon coconut sugar (if desired)


Put the coconut milk, water, chopped banana, vanilla essence and coconut sugar in a blender. Blend well.

Put the mixture in a bowl or glass jar, add the chia seeds and mix well so that the chia seeds are distributed evenly.

Pour into glasses, cover and refrigerate for at least 4 hours. Serve with your choice of berries. Serves 2.
